			<title>Sugars?</title>
			<description>I am trying to find out a little more about sugars and brewing.  I would like to use non-refined sugars. I know I can use Honey, Brown Rice Syrup solids and powdered sugars.  Can I uses Agave or other unrefined sugars?  How do I find out how much to use, or is it a trial and error type deal?  Can I use regular granulated sugars if they are completely dissolved?

			<title>Fermenting</title>
			<description>I just made up 5 gallons of Irish Stout last night. Only 24 hours later it is bubbling out of the airlock very little, almost none. It was my understanding that it would &quot;work&quot; for about 48-72 hours. Is something wrong? I did the instructions to the letter that came with the Irish kit.

			<title>vinegar</title>
			<description>The last three brews I have made had a slight vinegar taste. The lid on my wort bucket was cracked and I think oxygen was getting in during fermentation. Could this be the culprit? I just bought a new kit, so hopefully the problem is solved, but I won&apos;t know for about a month.

			<description>hi steve from AL now originally from WV. spent two yrs in oregon 00 01 and learned to appreciate something besides financial(natural)light.  Now in AL complained about no Microbrews now they passed law to sell them and they are all about $10 a 6 pack so decided to brew my own.  Have brewed before with coopers kit but just bought the kit from this monster brew (amazon) with 3 batches curious what batches come with that kit.  But very excited.

			<description>In the book &quot;BEER CAPTURED&quot;, by Tess and Mark Szamatulski there is a recipe for a clone of Belhaven Wee Heavy.  Included are notes for mini mash and all grain methods.

This is one of my favorites.  I&apos;ll add two dried habanero peppers at the end of the boil, and let them stay in until I rack into the secondary fermentor.  I get a little of that great habanero flavor without the burn. I think it is a great compliment to the flavor of this style of beer.</description>

			<description>Depending when you add them in the boil will determine the outcome. Hops added in the beginning of the boil will increase the bitterness of your brew. Hops added later in the boil or at the end will increase aroma and flavors. Be careful though if too much is added the recipe will be out of balance.
You want the wort to reach a boiling temp. and maintain it throughout the process. You certainly can knock it down a notch or two if its boiling out of control.</description>
