In the book "BEER CAPTURED", by Tess and Mark Szamatulski there is a recipe for a clone of Belhaven Wee Heavy. Included are notes for mini mash and all grain methods. This is one of my favorites. I'll add two dried habanero peppers at the end of the boil, and let them stay in until I rack into the secondary fermentor. I get a little of that great habanero flavor without the burn. I think it is a great compliment to the flavor of this style of beer.
