Depending when you add them in the boil will determine the outcome. Hops added in the beginning of the boil will increase the bitterness of your brew. Hops added later in the boil or at the end will increase aroma and flavors. Be careful though if too much is added the recipe will be out of balance.
You want the wort to reach a boiling temp. and maintain it throughout the process. You certainly can knock it down a notch or two if its boiling out of control.
